Vegan Blue Cheese

This is my attempt to create proper Vegan Blue Cheese – this one is over 6 weeks old. A typical dairy blue cheese is inoculated with mold spores of PENICILLIUM ROQUEFORTI. I have carefully studied the procedure, and although it needs perfecting, it’s pretty awesome (a little tweaking left for complete perfection !) The recipe will be released in due course. Magic Warming Mushroom Miso Broth

I call it a magic broth because it just feels and tastes so comforting, and I find it soothing, and yes, healing. A fast broth to prepare, full of goodness and a wonderful full flavour, making it a great convalescing soup, as well as a great starter for that rich main course meal. It’s ideal as an autumn/winter starter preceding vegan roasts or other similar dishes that require some effort – one often thinks ‘What […]

Halloumi Cheese Tart

This is truly a fun and easy tart to make, especially when you have made the halloumi recipe from my forthcoming book, YASOU, which should be available for pre-ordering very soon. If you wish to make it in advance of purchasing my book, then you can either use the Feta cheese recipe from my first book MOUTHWATERING VEGAN (available from Amazon), or any other meting vegan cheese which will work with this recipe. Serve it […]

Luscious Lime & Bean Guacamole

This guacamole was born from one missing avocado at the eleventh hour yesterday, but you know sometimes a mishap can be converted into something quite beautiful. This rich protein-packed dip is smooth and, frankly, delicious – this was confirmed by the gusto of our guests. We are now seriously addicted to this version, and here is the recipe for your delight. Great with crudités, on my crunchy flax crackers (recipe to follow soon), on bread, […]

Stuffed Mediterranean Loaf – Super Mouthwatering Treat

I stuffed a loaf with my Giardiniera recipe last year, but since I had run out of my giardiniera, I made this delicious delight with the contents of my fridge – and it was truly one of the best snacks I’ve had in my life !  It is such a treat, crunchy on the outside and full of colour, with contrasting texture and wonderful tastes on the inside – one bite and your bought, sold, […]

My Labneh Cheese

Strained yogurt (a.k.a., yogurt cheese, labneh (Arabic: لبنة‎ labnah),Turkish yogurt or Greek yogurt) is yogurt which has been strained (in a cloth or paper bag, or filter) to remove its whey, resulting in a relatively thick consistency (between that of conventional yogurt and cheese) — all while preserving yogurt’s distinctive, sour taste. Yogurt strained through muslin is a traditional food in the Levant, Eastern Mediterranean, Near East, and South Asia, where it is often used […]

Earthy Porcini & French Lentil Pâté

Here is a wonderful pâté, that you will enjoy time, and time again. The texture is close to real pâté, but without the cholesterol or cruelty.  It is ideal for taking out to picnics, as a starter, or to round off a satisfying meal.  It is perfect in sandwiches, and can be the basis of a light lunch, served with a fresh mixed salad of your choice.  A great combination of flavours, which will be […]

Wild Rice Salad

Serves 4 This salad has far too many benefits to mention here – suffice it to say, its ingredients are highly nutritious, the taste is sublime, and it won’t be an effort to indulge. This recipe features in my book ‘Mouthwatering Vegan’ and I wanted to gift it to you to enjoy a good hearty and delicious salad from my book.  Bon Appetit ! INGREDIENTS 1 cup mixed rice, wild red and black, boiled and […]

Glamorgan ‘Sausages’ In Eggplant ‘Bacon’ Wraps

A Glamorgan sausage is a traditional Welsh sausage, with the main ingredients being leek and cheese.  So I thought this should be an obvious candidate to be veganized.  But I must admit, the Glamorgan sausages I had in my pre-vegan days were a bit on the boring side, so I decided to liven my version up a bit.  I was inspired by the ‘devils on horseback’ recipe, which is usually prunes or dates wrapped in […]

‘Pesto Cremoso’ – Super Creamy Pesto

This is the most delicious and child-friendly pesto ever, rich with a creamy subtle taste of the herbs, garlic and cream – you will fall in love with this. If you love cream, pasta and pesto, then here is the perfect dish for you, and fast to make too.  Feel free to add some chopped sundried tomatoes, or even black olives for a stunning looking result.  This dish is also great served to non-vegan guests, […]
