If time isn’t on your side, but you’re after a delicious curry, then you’ve come to the right place. I specialize in super fast curries – the reason being that I love the spice, the aroma, the flavour and the creative challenge. This particular aroma dances in your head, and all you need to accompany it are some crunchy popadoms, and a small red and green Indian-style salad. This is a sort of Indo-Moroccan fusion [...]

Culinary love & pleasure are maxed up to the hilt in this lavish delight. Too many exotic ingredients combined to create this magnificent magic – so divine in taste, it was impossible to classify ! Serve with basmati rice, poppadoms, and a vegan raita. Serves 4 INGREDIENTS olive oil 1 medium sized onion, chopped finely 3 cloves garlic, finely chopped 2 cups (around 2 lbs/900 g) pumpkin peeled, cut into 1½ inch squares 1 large [...]

I felt like a risotto, but I only had basmati rice in the house, which I love. This is one of those wonderful fusions that really works – hence its name. A delicious and easy to make recipe – kids will almost certainly love this – if they like mushrooms and sweetcorn that is – even though I have spiced it up nicely. The flavours and textures really leave ones palette with a very satisfied [...]

This is a very easy Thai curry, which is just so delicious ! It is low in fat and the flavours just linger on your palette. So if you want to enjoy a Thai at home, or wish to make it for friends, then look no further. I made enough for 2 days, which rocks, because I have a whole lot of stuff waiting to be sorted out after my return from holiday. Serves 4 [...]

This is my veganized version of Wagamama’s yasai katsu curry – I tasted this curry sauce a while back with a vegetarian friend of mine. I couldn’t eat the vegetables as they were deep-fried, and I suspect the batter was made with eggs. but the sauce was quite delicious – a marriage of both sweet and spicy. I tried to savour the moment, and recreate the experience once I had returned home. I specialize in [...]

I have been meaning to make and share a tagine recipe of mine with you for ages, but something always seems to have taken over. But the good thing being, this is an all-year all- rounder, and can be enjoyed anytime your heart desires. This is a rich tagine, with long-lingering flavours, that will bring to life each and every taste bud you have – you’ll also realize you have more of them than you [...]

I guess this is something of a hybrid curry – pumpkin and red peppers are a staple of Thai curries, and I have combined this with Indian spices, to create an aromatic dish that is wonderfully warming. I always find eggplant (aubergine) to be an eager substitute for meat, as it manages to retain its form, and soak up all the wonderful juices. This is delicious served with a generous dollop of chutney, and naan [...]

I made these koftas with simple ingredients. I wanted a sort of crunchy paneer taste, and then I wanted a contrasting semi-sweet sauce to tease the buds and satisfy all the senses – a medium to hot curry sauce to accompany these wonderful and unique koftas. Then a mild vegetable such as spinach, I thought, would be ideal not to overburden the system. A slight twist, with a sweet and savoury mix, creating a very [...]

Ok, here is a recipe that I created because of my craving for a Tandoori Masala sauce. Here it is – I have included some delicious Spicy, Zesty Potatoes to just up it a notch further. The curry itself is easy to prepare, as are the potatoes – once you have all the ingredients on your work top it won’t be long before you smell the wonderful mixture of spices, and the aroma is divine [...]

I don’t often use potatoes with a curry, even though they go down so very well. They are filling and often I have a range of other accompaniments to marry with the main course. But I just fancied some spicy hot, zesty potatoes – so I created these for you. Needless to say they were absolutely divine, and went well with this curry, and I am sure will do well with other curries too. INGREDIENTS [...]
