Just wanted to let you know that I cooked this last night for my parents and hubby and everyone LOVED it! I subbed some of the aubergine for courgette, and unfortunately, I overcooked it a bit, so it all went a bit mushy. I rescued it by adding some chickpeas for a firmer texture. We loved the sweet taste and great spices. Served with the couscous (with free chilli instead of harissa) and crispy baked kale for a great flavour/texture contrast. I shall be doing this one again! Thank you!
